1. Join a volunteer group at home or abroad.
Following the hurricanes in the US and Caribbean, there are both national and international charities organizing volunteer efforts. Think Habitat for Humanity or the Red Cross.
On a local level, I have found soup kitchens generally need people over the holidays. Do check out holiday schedules ahead of time.
2. Sign up for a class like cooking lessons in Tuscany. The best way to do this is to go about 5 days ahead of the holiday. Thaat will give you a chance to create a new group of friends and contacts when classes are likely over for the holidays themselves.
Book lodging at a ski resort or island haven, Sign up for skiing lessons from Beginner to Expert or for the latter learn to scuba dive to learn something new and creat your own local team.

4. Find a river cruise from sedate holiday markets to adventures in remote areas. Add on a land package.
I have done this 4 times and had some of the best trips of my life. You have the advantage of time alone when you want it but your own space if you book a solo cabin. My favorites were Upriver on the Amazon in Brazil and the Mekong Delta cruise through Cambodia and Vietnam.

This has worked well for me from Africa and the Middle East to Europe and Asia. One of my top 3 was going independently through Australia. I loved Sydney but Melbourne was an even better launch point for 12 hour day tours. From there, I spent a long day on the Great Ocean Road and a contrasting one on Phillip Island walking alongside 1,000 returning penguins.
